Banana Bread

This is the best Banana Bread recipe...of course  just my opinion! Here it is, you'll have to make that decision for yourself..

Mix together 3  eggs, 1 cup oil and 2 cups sugar; add 2 cups mashed banana, 3 cups flour, 1 tablespoon cinnamon, 1 tablespoon baking soda, 1/2 teaspoon baking powder, 1 tablespoon vanilla, 1 teaspoon salt and 1 cup chopped nuts if so desire.
Mix all well..Pour into a well oiled/floured bread pan.

Bake at 350*  45 min to 1 hour till tests done. ( A wooden skewer, sharp knife, piece spaghetti--whatever ya have handy that works! )

Enjoy...make many  share...eat... make more!

NOTE: This is the recipe i use for most anything i have on hand..apples or applesauce, zuchini, squash, rhubarb, pumpkin and it always come out delicious...

Recipe?? Cake Truffles...

Really not a 'recipe' as more of something you just kinda throw together, makes it so much easier that way!  Take any cake, whether it be from scratch or a box and bake it as required. Upon taking out of the oven dump it into a big bowl...if you let it cool a bit you can use your hand to crumble--hands on---always good!  Next take your choice of a can of frosting...add to crumbled cake and mix well.  You will find that the texture of the mix is pretty interesting.  Make balls the size of a walnut or whatever size you prefer, i really like the size that fits in the mini cake liners--bite size. Roll all --i find the best way is to roll and place in a large cake pan, then refridgerate for a few hours.

Melt your chocolate for dipping, so many different kinds to choose from, whichever you prefer. Take your chilled balls out and dip in chocolate and lay on wax paper, foil, freezer paper...and if decorating , do while chocolate has not yet set.
SEE--- not hard at all eh!  These are so fun to do..I sure don't get them perfectly round but hey practice makes perfect eh?

Few pics and the previous mentioned banana truffles with photo....

Laundry Soap ah-hahaha then of course that means laundry!

Do we ever get done with laundry??  Made another batch of laundry soap yesterday and it has been doing it's time out thing for almost 24 hours ...Now i get to go play in it, if you have never made it, it's one for the kids ( hehe and adults) mixing after setting is such fun, the texture and silkiness is fun to mix...get the entire hand...arm into it...then off to find more containers to put it all. Makes 10 gallons and here where i live it comes out to 22 cents a gallon and it works wonderful, how could it not with the ingredients it uses. Also , if you've never made or used it is very skin friendly--have tested it on a few very sensitive skinned persons with no harm.

IN between  all that yummy goodness i made a few maybe not so good for ya lunches...a Big John Steak and onion - Linda Style..very good! then had run out of jalapeno butter so made another batch of that and cooked me up a burger with  my butter smothered in it...Think i am done in the kitchen for the night...

Hibernate

Well we finally got hit with snow and cold temps, 17 degrees not long ago...don't think it is much warmer now.. but on a good note we are suppose to get into the 40's again in a few days.  Well these kind of days are great for making goodies, mostly the kind that are yumm to eat , reading and watching A LOT of Big Bang Theory! I do have more Brownie Truffles to make but that may just have to wait for a little bit.

HOT MIX

Eat at your own risk...my favorite is the thin sliced cucumbers slapped on a turkey/ham sub or just right out of the container anytime day or night.

SO much better to make your own than  store bought.. Use any type veggie you like and start with pickle juice, add hot peppers and your veggies and let set for a few days..

This batch is ready to put in containers and fridgerate.

Focaccia Bread

Easy Focaccia Bread Recipe
This basic focaccia recipe can be used as a foundation for making focaccia. Add your own spices, herbs, cheeses, meats or vegetable toppings as desired.
Ingredients You Will Need:
1 ½ cups warm water
1 package dry yeast
1 teaspoon sugar
5+ tablespoons extra-virgin olive oil
1½ tablespoons table salt
3 ¾ cups all-purpose flour
1 teaspoon coarse sea salt
Combine ½ cup warm water, the packet of dry yeast and the teaspoon of sugar in a large mixing bowl. Stir until the sugar and yeast dissolve. Let stand for five minutes. The mixture should foam.
Add one cup of warm water, two tablespoons of olive oil, the table salt and the flour. Mix until ingredients are well combined.
On a floured surface, knead the soft dough for about seven minutes, until the dough is elastic and smooth. You may be tempted to add extra flour, but do not do so. The dough should be soft.
Put dough in a bowl liberally greased with olive oil. Rub extra olive oil on the dough to grease the dough as well. Place the bowl of dough in a warm place (the temperature should be between 80 and 85 degrees) and allow it to rise until it is twice its original size.  This should take approximately an hour.
Grease a jelly roll pan with olive oil. Press the dough into the pan, spread more olive oil on the dough and place it in a warm place where the dough can rise again to double the size. It should take approximately 45 minutes for the dough to rise sufficiently.
Use your fingertips to make the classic indentations over the bread, approximately an inch apart. Make the indentations deep. You want to come close to touching the bottom of the pan. Spread olive oil over the top of the dough and sprinkle the coarse sea salt (or other toppings) on the dough, lightly pressing the salt (or other toppings) into the dough and deeply into the dimples made by your fingertips. Put the dough back in the warm place to rise one more time, again for about 45 minutes.
While the dough is rising the final time, preheat the oven to 450 degrees. Move the oven rack to the lowest slot possible in your oven and bake the focaccia on the lowest rack for approximately 18 minutes or until the bread is lightly browned.  Remove from pan immediately and cool on rack.
Dress Up Your Focaccia Bread
The most wonderful thing about focaccia bread is how versatile it is. Classically, focaccia bread is topped with olive oil, coarse sea salt and parmesan cheese. However, you can press essentially any herb, spice, cheese, minced or sliced vegetable or meat into the dough before baking to make a focaccia bread that is as unique as you are.
Try caramelizing sweet onions and pressing those into the top or topping the bread with sliced olives. Typical toppings include rosemary, thyme, cilantro, basil, dill weed, salt, pepper, crushed red pepper, sardines, anchovies, mushrooms, sun-dried tomatoes, cheeses of all kinds and olives.
Serving Suggestions for Focaccia Bread
Focaccia is a perfect appetizer. Serve it slightly warmed with a shallow dish of olive oil with pepper or sun-dried tomatoes for dipping.
You can also serve focaccia as a bread accompaniment for any meal.  It's most suited for Italian meals simply because that's where the bread was first used. It is perfect for dipping into any pasta sauce or for picking up the remains of a meal, almost like a scrumptious edible sponge.
Because you can tailor the herbs and toppings on the bread, you can make your focaccia to match the meal you are serving. For example, if you are serving baked chicken with mashed potatoes, you can sprinkle rosemary and thyme on top of the bread before baking, pressing some of the herbs into the dough with your fingertips as you make the classic imprints.

Fun Easy...

Most of the yumm things i make are pretty much easy and fun to make...even better to share and eat.. If you have never made Focaccia bread, oh my goodness...you should...one of the easiest and fun  recipes and when it is done..you will be so glad you did...
