Springerle - Grandma's German cookies

 You need this awesome roller that has pictures on it...i suppose you don't actually HAVE to have one but they are prettier!

Beat 12 eggs and 3 lbs powdered sugar for 1 hour
(15 min on electric mixer)
add 1/2 tsp bicarbonate of ammonia (bakers's ammonia)*
2 tsp powdered anise seed.
2 tbl lemon juice.
little grated lemon rind
3 tbl honey to help keep it soft
mix and add 6-8 cups flour to thicken and then
knead til quite stiff **
place some dough on board and roll with regular
rolling pin to 1/2" thick and about width of mold roller *

Press or roll mold roller over it so designs will show good.
cut and dry overnite.
bake @20 min at 275 degrees til sides are soft to touch.

my notes.
I use greased cookie sheets and let cool in pan before taking out.
*1/2 tsp bicarbonate of ammonia is same as 1/2 tsp baking powder.
One pound of sugar equals 2 1/3 cups.
**I had to add more flour to get stiff dough, probably 2-3 cups or more--
enough so dough does not stick to roller. with paddles on mixer you
can add a lot more flour before having to do by hand..
***I roll out little thicker than 1/2" so after pics put on it is not real thin.
recipe makes about 160+ cookies. I always make just 1/2 which makes
about 80 or so.

Cabbage Roll Soup

Yummy Delicious CABBAGE... so many things you can do with cabbage... This soup is one of the best things.. I have made a few different recipes but this is is my favorite..will be using this one from now on..

Cabbage roll soup

1 pound ground chuck fried with onions
2 t garlic
4 c chopped cabbage
2 carrots
4 cups beef broth
3 8 oz cans tomato sauce
Salt and pepper
1 bay leaf
3 T brown sugar
2 T parsley
2 cups cooked rice
After cooking burger add all but the rice and simmer for couple hours till cabbage is to your liking then add rice and enjoy.
I put mine over a bowl of rice..

Berry Bundt Cake

1/2 cup butter
3 eggs
3 1/2 cups flour
2 tsp baking powder
1/4 tsp salt
1 cup sugar
1 cup brown sugar
4 cups berries... blue-rasp-black .. your choice or a mix
1 cup milk
1tsp vanilla

Have butter and eggs sit at room temp for 30 minutes.

In large bowl add flour, bk powder and salt. Set aside.

In another large bowl cream the butter and sugar with electric mixer. Add eggs mix together.

Stir berries into flour mixture by hand.. then stir flour mix into butter mixture.
Stir in milk and vanilla until combined and spread into a buttered and floured bundt pan.

Bake @ 325 for 75 minutes or skewer comes out clean.
Let sit 15 minutes and turn out onto serving platter.

Linda's Hot Cocoa Mix

10 cups instant dry milk.. I put through food processor
6 cups powdered sugar
1 3/4 to 2 cups cocoa
2 cups dry French vanilla creamer

Mix well. Store in airtight container

I use little over 1/3 cup to 1 cup hot water.
stir well...

All kinds of add ins you can use to make this even more delicious...my favorite is to pour a big ol splash of coconut crème coffee creamer.. it's like a liquid mounds bar! So delicious

Scrapple

Scrapple...such a nice word..unless you're thinking of the way it used to be made way back in olden times and they used everything from the pig but the oink! EWW.... I'll pass, thanks..
This recipe comes from Della's in-laws from the back woods of Beckley, West Virginia! Ok so I don't really know if it's backwoods but the original recipe or way of making it is very old, going back generations..
Give it a try if you've never had..its very delicious..

Della’s Scrapple
Really not a recipe as per measurement... more of a taste and texture thing..
We start with a big pork roast..with some fat on...Just cook pork in water with sage, Lawreys, some accent and garlic powder til falling apart. Grind it up fat and all and put back in pan with water. Add white cornmeal, til the  right texture,  heating on low while stirring... often til thickens. Taste a bit for seasoning to your taste.. may add more sage or other seasoning till right taste..Spread in pan,refrigerate slice and fry!! Yum! ( you want it to set for at least 24 hours to get a good slice.😊
The original recipe only called for sage, salt and pepper.. this revision is Della’s and it’s delicious.. mine would have onion and pepper in it.. two things Della does not like..

Sorry I cannot be more specific on texture and amounts..it is a trial and error kinda recipe.
I've made it where i didn't get the texture correct and it wouldn't hold together well.. still fried it and ate it ..was still good..so i keep trying, this next time will be perfect!!

Linda's Fried Walnuts

6 cups water
4 cups walnuts
1/2 cup sugar
Pinch salt
Oil for frying
In sauce pan on high heat bring water to a boil then add walnuts and bring back to boiling then cook for one minute .
Pour in colander and rinse with hot water then drain ..
in large bowl with a rubber spatula stir walnuts in sugar until dissolved let sit a few minutes if needed
In a big cast iron pan bring 2 inches of oil to 350° or you can use a fryer, add about 1/2 of the walnuts and fry for five minutes or until golden ...stirring often ... take out and put in a colander to drain, salt lightly. Shake often while cooling so they don’t stick.
Lay out on parchment to continue cooling.
Repeat with remaining walnuts.
When cool store in an airtight container

Peanut Butter Balls

Oh so good.. and can add in many options as you like... coconut, mini choco chips, chopped nuts.... etc..


1/2 cup softened butter
2 1/2 cups pt butter
2 3/4 cup powdered sugar
2 cups rice crispies
I also added:
1 scoop protein powder
2 teaspoons ground flaxseed

Mix all together well and roll into balls, size of your choice.
Dip in chocolate if you like but we loved them plain or rolled in powdered sugar..
Chocolate dipped ones I also top with nuts and or coconut..

Try not to eat all in one setting!! Delicious!

Cinnamon-y Applesauce Pumpkin Muffins

Lorelei wanted applesauce muffins..and well, since they don't eat the best I always try to add in good for them stuff. Such as protein powder, which you cannot taste and pumpkin which thankfully they really like anyway!!


1 boxed carrot or spice cake
4 eggs
2/3 cup oil
3/4 cup homemade cinnamon applesauce
      if not very cinnamon-y might add a T or so
1/2 cup pureed pumpkin
1/4 cup brown sugar
1 cup milk
1 big scoop of vanilla protein powder

Mix well and scoop into any size muffin tins you like.
I use reg lined cupcake pan and the mini cupcake pan.

350* at 18 minutes for regular pan and
16 minutes with the mini pan..i use a toothpick and test to make sure done.

cool and drizzle or dip in glaze of your choice.. or eat plain..

Garlic Hummus

Garlic Hummus

1 15 oz can chickpeas (garbanzo beans )
1 teaspoon baking soda
1/2 cup tahini paste
1/4 cup extra virgin Olive oil
2-3 Tablespoons fresh lemon juice
1-2 cloves garlic
1/4 teaspoon ground cumin
1/4 teaspoon salt
reserved water from cooking the chickpeas

Drain and rinse the chickpeas. Swirl around and you will get a lot of the skins off if you don't care for them.
Put in a saucepan and cover with water about 3 inches, add 1 teaspoon baking soda and bring to boil on med high heat, then cover and turn to medium heat and cook for 1 to 1 1/2 hours. Drain but save some of the water. I rinse a bit more to really get rid of the skins that are now floating everywhere.

Put beans in food processor till no chunks are left.
add the tahini paste, olive oil, lemon juice, cloves, cumin and salt.
Process until smooth. Add some of the reserved liquid a little at a time IF needed till desired consistency.
Put in a pretty bowl an drizzle with evo and paprika , your choice.. I just like to dig in..

Pepperoni Chips

Crunchy deliciousness and so easy!

Preheat oven to 350°F.

Place the pepperoni slices in a single layer on a baking sheet.
Bake until crispy, about 10 to 15 minutes.
Transfer to paper towels to absorb the fat and cool to room temperature.
Will keep for several days at room temperature

Magic Cookie Bars

These are the easiest things to make and oh so very delicious..IF you are like some people I know and eat the entire batch, I just want to let you know it is roughly 3000 calories!

Grease a 9 X 13 pan

Mix 1/2 cup melted butter and
1 1/2 cup grahm cracker crumbs together... pat into bottom of pan...

Sprinkle 2 cups chocolate chips over all
Sprinkle 1 cups chopped walnuts over all
Sprinkle 1 1/3 cup coconut over all
press down
Drizzle  1 14oz can of SWEETENED CONDENSED milk over all

Bake @ 350
25 to 30 minutes till lovely browned

Cool... cut into squares
ENJOY

RANCH CRACKERS

If you have never tried these...ohhh..what you are missing..so very good!! I don't think I have ever met anyone who didn't love them! and oh so easy to make!



Ranch Crackers:

2 bags oyster crackers
2/3 cup oil
1 Package dry Ranch Dip Mix
1 T dill weed

that is the original recipe..i tweak mine..just cuz I like it better.. I use 2 packages of the ranch mix and 2 or more T of dill..

Mix all together and let set overnight..the flavor is much better after sitting..

Eat and Enjoy..pass onto friends...

Pepper Relish/Jelly

It is actually called Pepper Relish but I call it Pepper Jelly..although I wouldn't eat it with peanut butter...I don't think..!

Made with sweet red peppers..you could use a mix of sweet peppers..
After canned.. it can be used with and on many different food items..i have slathered it on a burger..oh so good but here I have mixed with cream cheese and used as a dip for Ritz crackers...triscuts or any other type would be great too!

Zucchini plus Cookies

  • 1/2 cup soft butter
  • 3/4 c sugar
  • 1 1/3 - 1 1/2 c flour
  • 1 tsp bk Powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 c grated zucchini
  • 1/2 cup almonds, coconut,raisins and chocolate chips
Mix well and drop by tsp full onto baking sheets

Bake  350*
15 - 18 minutes till a lovely brown

Stuffed Pepper Casserole

1 pound lean ground beef
2 green bell peppers, diced
2 red bell pepper, diced
1 small onion, diced
1 tablespoon minced garlic
2 (8.8-ounce) pouches Uncle Ben’s Ready Rice brown rice
1 (23.25-ounce) jar Prego Light Smart Traditional pasta sauce
½ tablespoon dried oregano
½ tablespoon dried basil
1 teaspoon salt
1 teaspoon black pepper
1 cup shredded reduced-fat four cheese Italian blend (I like Sargento®)

Instructions

Preheat oven to 350 degrees. Spray a 13×9-inch casserole dish with nonstick cooking spray and set aside.
In a large skillet over medium-high heat, cook the ground beef, bell peppers, onion, and garlic until the vegetables soften and the beef is no longer pink, 10 to 12 minutes. Use a wooden spoon to break up the beef as it cooks. Drain any excess fat and return the skillet to the stovetop, turning the heat down to low.
Microwave the rice according to package directions.
Add the cooked rice, pasta sauce, basil, oregano, salt and pepper to the beef in the skillet and mix well. Transfer the skillet ingredients to the prepared baking dish.
Sprinkle the Italian cheese on top of the casserole.
Bake uncovered until the cheese is melted, 18-20 minutes.

Shirl's Onion Bread

This bread is so very good..nice onion flavor..give it a try..


 Mix together till yeast dissolved:
12 ounces of warm water
 one package of yeast
 2 tablespoons of sugar

Add the rest of ingredients:

 2 tablespoons of dry milk
 teaspoon of salt
1 teaspoon of onion powder
 one package of Lipton Onion Soup mix
 4 cups of flour
and 3 tablespoons of butter

Mix together well and add any other add ins you would like such as garlic powder, minced onion or shredded cheeses, mix well again.. cover...let rise.

 punch it down put it in bread pans

let rise again

 then bake 350 for approximately 20 minutes

Coffee Mix

Coffee Coffee  Coffee.. for anytime but hot summer days are the best.. Make as an iced coffee, slushie or coffee smoothie.. Delicious!

In saucepan on medium heat add the following:

1 1/2 cup sugar
2 cups water
1 cup instant coffee granules
2 teas vanilla
1/2 cup caramel ice cream topping

Bring to a boil---take off heat---let cool-- refrigerate

Use 2 T per 8 oz milk

or use to taste in any of your own recipes..

One of my favorites is milk, frozen banana, 4 T coffee mix and hazelnut creamer all blended in my Bullet..sometimes I add ice sometimes not..

Play around with it see what tickles your fancy!

NO BAKE ENERGY BITES

1 cup oatmeal
1/2 cup chocolate chips  ( I used white chocolate chips )
1/2 cup peanut butter
1/2 cup flaxseed
1/3 cup honey
1 tsp vanilla
2/3 cup coconut-my addition

Mix together and set in fridge for 1/2 hour.  Roll into 1" balls.

I rolled in powdered sugar and kept in fridge.

Next time I make I think I will add some chopped dates also.. yumm..

Linda's Oatmeal Cookies

1/2 cup butter
1/4 cup crisco
1 cup brown sugar
1/2 cup sugar
1 egg
1 tsp bk powder
1 tsp vanilla
1/4 tsp bk soda
1 tsp cinnamon
1/2 tsp cloves
2 cups oats

any additions you prefer:

2 cups cranberries
2 cups raisins
2 cups chocolate chips

and nuts of your choice

Cream the butter, crisco, sugars and egg then add the rest, mix well. Drop on greased cookie sheet, I use a small scoop- works so nice.

Bake at 375
10 to 12 minutes

CHEESY BACON POTATOES

CHEESY BACON POTATOES

Wash and slice potatoes.. Melt a stick of butter in saucepan and add your sliced potatoes. Also add your spices. I used a mix of garlic, onion, salt, pepper, bay leaf, cumin and rosemary. Stil to coat.

Line your potatoes in a cast iron skillet that has been coated with bacon grease, or oil of your choice. Top with bacon pieces, i cut mine in small chunks. Use as much as you like.i covered my potatoes with about a half pound.

Bake in a 425* oven for 45 minutes, check make sure done..take out and top with cheese and back in oven to melt cheese.

Take out and sprinkle with chopped green onion and sour cream , if desired.

Next time i make will add onion..

ENJOY
