Springerle - Grandma's German cookies

 You need this awesome roller that has pictures on it...i suppose you don't actually HAVE to have one but they are prettier!

Beat 12 eggs and 3 lbs powdered sugar for 1 hour
(15 min on electric mixer)
add 1/2 tsp bicarbonate of ammonia (bakers's ammonia)*
2 tsp powdered anise seed.
2 tbl lemon juice.
little grated lemon rind
3 tbl honey to help keep it soft
mix and add 6-8 cups flour to thicken and then
knead til quite stiff **
place some dough on board and roll with regular
rolling pin to 1/2" thick and about width of mold roller *

Press or roll mold roller over it so designs will show good.
cut and dry overnite.
bake @20 min at 275 degrees til sides are soft to touch.

my notes.
I use greased cookie sheets and let cool in pan before taking out.
*1/2 tsp bicarbonate of ammonia is same as 1/2 tsp baking powder.
One pound of sugar equals 2 1/3 cups.
**I had to add more flour to get stiff dough, probably 2-3 cups or more--
enough so dough does not stick to roller. with paddles on mixer you
can add a lot more flour before having to do by hand..
***I roll out little thicker than 1/2" so after pics put on it is not real thin.
recipe makes about 160+ cookies. I always make just 1/2 which makes
about 80 or so.

Cabbage Roll Soup

Yummy Delicious CABBAGE... so many things you can do with cabbage... This soup is one of the best things.. I have made a few different recipes but this is is my favorite..will be using this one from now on..

Cabbage roll soup

1 pound ground chuck fried with onions
2 t garlic
4 c chopped cabbage
2 carrots
4 cups beef broth
3 8 oz cans tomato sauce
Salt and pepper
1 bay leaf
3 T brown sugar
2 T parsley
2 cups cooked rice
After cooking burger add all but the rice and simmer for couple hours till cabbage is to your liking then add rice and enjoy.
I put mine over a bowl of rice..

Berry Bundt Cake

1/2 cup butter
3 eggs
3 1/2 cups flour
2 tsp baking powder
1/4 tsp salt
1 cup sugar
1 cup brown sugar
4 cups berries... blue-rasp-black .. your choice or a mix
1 cup milk
1tsp vanilla

Have butter and eggs sit at room temp for 30 minutes.

In large bowl add flour, bk powder and salt. Set aside.

In another large bowl cream the butter and sugar with electric mixer. Add eggs mix together.

Stir berries into flour mixture by hand.. then stir flour mix into butter mixture.
Stir in milk and vanilla until combined and spread into a buttered and floured bundt pan.

Bake @ 325 for 75 minutes or skewer comes out clean.
Let sit 15 minutes and turn out onto serving platter.
